• 1 cup very smooth creamy natural peanut butter (MaraNatha)
  • 2/3 cup honey
  • 1 tsp vanilla extract
  • 1/2 tsp sea salt
  • 2 1/2 cups of whole rolled oats
  • 1/3 cup mini chocolate chips
  • 1.5 tbsp crushed peanuts
  • 1.5 tbsp crushed cashews
  1. Line a baking pan with parchment paper.
  2. In a medium bowl, mix the dry ingredients together: oats, salt, peanuts, cashews.
  3. In a large bowl, mix the wet ingredients together: peanut butter, honey and vanilla.
  4. Combine the contents of both bowls. The mixture might seem dry at first, but keep stirring and it’ll come together.
  5. Stir to combine and press firmly into the pan. Use a second piece of parchment paper and the back of a measuring cup to help flatten the mixture. Chill for at least 1 hour, then slice into bars.
  6. Store bars as-is in the freezer. Optionally, remove the parchment paper and wrap each bar individually in aluminium foil for easier storage and eating.

Notes

  • A bit more whole rolled oats might make the bars a little less sticky but they’re going to be sticky no matter what.
