Mush de Vegan

Not a vegan turned into mush but a vegan mush that a vegan would approve of.
Serves 6

Ingredients

  • 3 tbsp extra virgin olive oil
  • 1 onion (diced)
  • 5 cloves of garlic (diced)
  • 1 tsp of chili flakes
  • salt and pepper (to taste)
  • 2 cups of chick peas
  • 540ml dark red kidney beans
  • 650ml of tomato sauce
  • 2 cups of basmati rice (cooked and seasoned with curry powder)
  • 398ml green peas
  • (optional) parmesan cheese
  • (optional) egg

Steps

  1. Heat the olive oil on a large pan.
  2. Saute the onion and garlic on low heat, adding salt, pepper and chili flakes to taste.
  3. Once the onion is translucent, add the chick peas and turn the heat up to high.
  4. Once the chick peas soften, add the red kidney beans.
  5. After 1min or so, add the tomato sauce and bring the mix to a boil and simmer.
  6. Add the rice and green peas to the pan, mixing it all together.
  7. Serve in small bowls, add parmesan cheese and/or a sunny side up egg on top for a little extra flavor.
