Garlic Pickle Slices
  • 12-15 small cucumbers
  • 4-5 garlic cloves, peeled and smashed
  • 1 bunch fresh dill sprigs
  • 1 1/2 cups of water
  • 1 1/2 cups of vinegar
  • 2 tbps of kosher salt
  • 1 tbps of sugar
  • 1/2 tsp of red pepper flakes
  1. Wash the cucumbers.
  2. Cut the tips of cucumbers and throw them away.
  3. Slice the cucumbers into slices length-wise.
  4. In a medium sauce pan, mix the white vinegar, water, kosher salt, and sugar.
  5. Heat over medium-high until it begins to boil, stirring occasionally until the salt and sugar have completely dissolved.
  6. Remove the saucepan from the heat and allow the brine to cool to room temperature.
  7. Place the smashed garlic cloves, fresh dill sprigs, and red pepper flakes at the bottom of the jar.
  8. Carefully pack the cucumber slices tightly into the jar.
  9. Once the brine is cool, pour it into the jar ensuring that the cucumber slices remain in the brine (no floaters!).
  10. Seal the jar and let it ferment for 48 hours (burping it daily).
  11. Store them in the fridge and enjoy over the course of the next few weeks.
