Garlic Pickle Slices

- 1 large jar (1L)
- 1 medium sauce pan
- 12-15 small cucumbers
- 4-5 garlic cloves, peeled and smashed
- 1 bunch fresh dill sprigs
- 1 1/2 cups of water
- 1 1/2 cups of vinegar
- 2 tbps of kosher salt
- 1 tbps of sugar
- 1/2 tsp of red pepper flakes
Steps
- Wash the cucumbers.
- Cut the tips of cucumbers and throw them away.
- Slice the cucumbers into slices length-wise.
- In a medium sauce pan, mix the white vinegar, water, kosher salt, and sugar.
- Heat over medium-high until it begins to boil, stirring occasionally until the salt and sugar have completely dissolved.
- Remove the saucepan from the heat and allow the brine to cool to room temperature.
- Place the smashed garlic cloves, fresh dill sprigs, and red pepper flakes at the bottom of the jar.
- Carefully pack the cucumber slices tightly into the jar.
- Once the brine is cool, pour it into the jar ensuring that the cucumber slices remain in the brine (no floaters!).
- Seal the jar and let it ferment for 48 hours (burping it daily).
- Store them in the fridge and enjoy over the course of the next few weeks.
