Cream together the butter, white sugar, brown sugar until smooth.
Beat the eggs in one at a time, then stir in the vanilla extract.
Dissolve the baking soda in hot water, add it to batter along with salt.
Stir in flour, one cup at a time, and then the white chocolate chips.
Drop palm-sized balls of dough onto pans.
Bake for about 12min in the preheated oven, or until the edges are nicely browned.
Remove from oven, spatula them off onto a plate and let the cookies rest for 1min.
Serve with milk for dipping.
Notes
This recipe makes 24 large cookies, if you’re a lonely bachelor or a Karen looking for a love, you can separate the dough into batches wrapped in tin foil and freeze them. Take the dough out and thaw it out whenever you want to make more cookies.
If you’re using a convection oven, reduce the heat by 25F, flatten the cookie dough balls on the pan and follow the time precisely because the edges won’t brown (heat is distributed evenly so everything is going to brown equally).
